I have baked quite a few banana breads and tried several different recipes. This particular one has had the biggest success with my family so far. At least with respect to the dough. What we cannot agree on is the frosting. Whether the banana bread is better with or without the frosting, and whether it should be the cream cheese one or maybe some different type of frosting?
What do you think? What is your favourite banana bread recipe? Plain one, with chocolate pieces, with walnuts, with or without frosting ..?
Ingredients
All at room temperature.
Dough:
- 1 ½ cups plain flour (180 g)
- ½ teaspoon baking soda
- 1 teaspoon baking powder
- 2 large eggs
- ¾ cup granulated sugar (150 g)
- 3 – 4 ripe bananas
- ½ cup sour cream
- ¼ cup oil ( 56 g)
Cream cheese frosting:
- 1 ½ packs cream cheese (340 g)
- 1 cup powdered or granulated sugar
- 2 tablespoons butter
- 2 teaspoons fresh lemon juice
Directions
Preheat oven to 180ºC (355ºF). Butter and flour a cake form.
In a medium bowl, mix the flour, baking powder and baking soda. In a large bowl, beat sugar and eggs for about 2 minutes. Add bananas and mash them with a fork. Add sour cream and oil and mix well.
Add the flour mixture and mix until well combined.
Transfer the dough into the cake form.
Bake for about 40 mins. Use a skewer to test if the cake is done. If you insert it in the centre of the cake, it should come out clean. If not, leave the cake in the oven for a few more minutes.
In the meantime, prepare the frosting. In a bowl, beat cream cheese with butter. Add sugar and lemon and mix until combined. Refrigerate until ready for use.
Once the banana cake cools down, spread the frosting on top of it. You can sprinkle the frosting with cinnamon and / or with chopped nuts. Recommended storing at the fridge.
