Is it just me or are the simplest recipes often the best?
I have already done these muffins several times and they have always disappeared really fast!
Moist and fruity with crunchy top. And they are easy and fast to make!
Ingredients (for 12 muffins)
- 320 g all-purpose flour
- 120 g granulated sugar
- 2 teaspoons baking powder
- pinch of salt
- 2 large eggs
- 1/2 cup sour cream
- 1/2 cup whole milk
- 1 teaspoon vanilla extract
- 170 g butter, melted
- blueberries, 1 – 1 1/2 cups based on your preference
- Optional: muesli mix of your choise
Directions
Preheat oven to 190ºC (375ºF). Line muffin pan with liners.
In a large bowl, mix together flour, sugar, baking powder and salt.
In a separate bowl, whisk eggs, sour cream, milk and vanilla extract.
Add the egg mixture into the flour mix and whisk. Add the melted better and whisk until well combined. Fold in blueberries. Optional: you can mix some of the muesli mix into the dough.
Fill te muffin cups (to the brim). Optional: sprinkle the top of the muffins with the muesli mix.
Bake for about 30 – 35 mins until golden.
