This recipe has it all – fresh fruit, chocolate chunks, chocolate glaze and the skyr in dough giving it a nice moisture and a bit of tanginess.
Skyr is traditional Icelandic yoghurt with slightly sour flavor. It is similar to curd cheese. I used vanilla-flavored one to boost the vanilla flavor of the cake, in addition to the vanilla bean paste.
Chocolate glaze is optional. I used a ready-made one, but you can just melt white chocolate in water bath and pour it over the cake.
Ingredients for 1 loaf
- 125 g butter (room temperature)
- 130 g cane sugar
- lemon zest from one lemon
- pinch of salt
- 3 eggs (room temperature)
- 150 g skyr (vanilla or natural)
- 210 g all-purpose flour (you can mix it with whole-meal or rye)
- 1,5 baking powder
- 70 g white chocolate chunks
- 130 g blueberries
- white chocolate glaze (ready-made) or 75 g white chocolate
Make the dough
Preheat oven to 180ºC (355ºF). Grease and flour a baking form.
In a bowl, beat together sugar, softened butter and lemon zest until fluffy. Add egg yolks and beat for a minute or two until combined and fluffy. Add skyr.
In a separate bowl, mix the flour and baking powder. Gradually add the flour to the yolk mixture.
Mix in the chocolate chunks and blueberries.
Pour the dough into the baking form and place the form in the oven.
Bake the cake
Bake for about 60 mins. Use a skewer to test if the cake is done. If you insert it in the centre of the cake, it should come out clean (except for melted chocolate). If not, leave the tray in the oven for a few more minutes.
Glaze the cake
Once the cake cools down, prepare the glaze.
You will need two pots. One slightly larger than the other one. Fill the bigger pot with some water and place the smaller pot inside so that it doesn’t touch the water. Place this “double pot” on the stove and put the chocolate in the smaller pot. As the water in the bigger pot starts boiling, the chocolate in the smaller pot start melting. Keep stirring.
Pour the glaze over the cake.
As an alternative, you can use ready-made white chocolate glaze like I did.
